Baked Japanese Cheesecake

Do you know? Japanese cheesecake was original a modified version of popular French dessert souffle Fromage. Japanese people admire the taste of the souffle and turned it into a light cheese of their own.

And Cheesecake match perfectly with Latte, Cappuccino or Caf'e con lech (caffe o'le).

Now, let me share with you my secret recipe of 'Baked Japanese Cheesecake'

Cake base:
250g cream cheese
25g butter
75g sugar
4 egg yolks
1/4 cup milk
1/2 tsp vanilla extract
25g flour
4 egg white

Method
1. Grease and line a cake tin.

2. Beat cream cheese, butter and 50g of the sugar together until creamy. Mix in egg yolks, milk and vanilla.

3. Sift in flour and fold gently into the mixture.

4. Whisk egg whites with the remaining sugar until stiff; fold gently into the cheese mixture.

5. Pour the batter into the cake tin, and bake in water bath at 150'C or 300'F for 1 hour, let cool and serve.
